• LINE INTRODUCTION 

This ZLINE's production line is the best solution for making no-puff pastry bread. Especially ciabatta. As we all know, ciabatta is a type of Italian bread with extremely high moisture content. This kind of soft, sticky dough places higher demands on production equipment, requiring precise handling without damaging the internal structure.The ZLINE Ciabatta Forming Line is specially designed to process dough with up to 70% hydration. Featuring a low-pressure, stress-free stretching and cutting system, it maximizes the preservation of the dough’s air cell structure and natural irregular shape—making it ideal for large-scale production of ciabatta with an authentic, artisanal texture. The cutter machine with special design can enable the production line to process the dough of a moisture content of 72%. Two sets of steel plates pat the dough gently to give it a regular shape while avoiding to damage the dough structure.These results in a bread that is similar in shape and texture to that of a handmade one.

The complete production line includes a dough divider, two-roller dough sheeter, multi-roller dough rolling machine, forming machine, cutting table, strip arranging machine, panning machine, and flour sprinkling machine,proofing system. Optional equipment such as tunnel oven, and packaging equipment can also be added according to customer needs.
